Last night it was Halloween and I am astonished at the amount of refined sugar my kids managed to get hold of in less than 45 minutes around the block ! Surely this amount of the sweet stuff is illegal !
As we approach the most indulgent time of the year where yet more sweet treats are bound to flood our tables , here is an easy recipe to tempt you to the healthier side of indulgence . Absolutely no cooking required !
INGREDIENTS ( makes around 12 truffles):
227 g of dates ( Medjool , check the label and avoid ones with added sugar)
5 table spoons of almonds ( or other nuts if you prefer)
Half table spoon of coconut oil ( optional)
1 to 2 table spoons Coco powder ( no added sugar - Green and Blacks is one of the best ones but I have used supermarket own brand as well)
Seeds or dried coconut shavings ( optional)
METHOD
Blast the nuts in a food processor until finely chopped (use the pulse function if using a nutribullet)
Add the dates and blast until forming a uniform paste, add the coconut oil ( optional, it gives a nice taste and shine) then add the cocopowder ( start with 1 flat tablespoon and check the consistency before adding anymore)
Transfer to a bowl and mix with your hands until you obtain a dough that does not stick to your hands ( if too sticky add tiny bit more of coco powder at a time)
Make small balls with the paste and choose your dips if any ( I chose sesame seeds and coconut shavings here )
Put in the fridge and take out 30 minutes before serving (if they last that long) . Enjoy !
